Sorry for my mistake.
Please add this line "pdf.ConvertOptions.SetPdfToXlsxOptions(PdfToXlsxLayout.Text);” to achieve you requirements.

            pdf.LoadFromFile("LabResultDataSheet_13-02-2021_14-Feb-2021 16-31.pdf");
            pdf.ConvertOptions.SetPdfToXlsxOptions(PdfToXlsxLayout.Text);
            pdf.SaveToFile("result.xlsx", FileFormat.XLSX);
